I wouldn't mix it up on the spot due to unsanitary workspace conditions. Push comes to shove, make up however much in a smaller batch and if you have to, take orders and declare a pickup spot & time for another day if they're local (or ask for $5 for shipping costs) if you really really want the sales. But I really wouldn't do it on the spot.
Plus, if you are the only one at your booth, if you're busy mixing up a bunch of bath salts, you run the (sort of big) risk of losing potential customers who just want to pay for something and be on their way and don't really want to wait around however long for you to finish mixing up x number of bath salt orders.
