Last night about 8:oo, I made goatmilk, oatmeal, and honey soap.
YAY. I poured in a tray mold and a couple clam shell molds.
I set it uncovered on the counter, then I saw it start to heat up,
so I put it in the frig. (it did partial gel)
This morning, I took it out of the frig and one of the clamshells looked
like it was pulling away from the sides, and I'm VERY impatient, so
I popped it out. Soft but ok. I noticed a runny, honey colored water
on the bottom of the mold that smelled like amonia, the soap however,
smells great.
I checked the tray and other molds, without unmolding, and they too
have that same liquid on the bottom..........so....... do I
1. Leave them alone and forget it till tonight..the liquid will absorb (?)
2. Unmold so that smelly liquid will be off them

They smell great now in the mold....it's that liquid that stinks

Goatmilk soaps can smell like ammonia in the beginning. Did you check the liquid for zap? It's possible that your soap overheated due to the sugars in the milk and the honey.

The soap gelled in the center, but not to the edge.
Since I put in in the frig, and the soap itself smells great,
I think I caught it before it overheated.
I'm confused/concerned about the runny liquid on the bottom, only,
of the molds. I won't check for zap yet, since it won't be 24hr
till 8:00 tonight.
The tops of the soap smell really good, but I'm afraid when I unmold
like I did the one, that will smell. In other words, I don't think I want
that liquid to absorb into the good smelling soap......so, should I unmold
now before it does, ?

You can wait if you like, but if the liquid zaps, you best bet is to rebatch.

I stuck it in the freeze for 1/2 hour and saw the bottom lightened up.
So, I went ahead and and unmolded......no liquid.
It does have a definate power circle on the tray mold, but
the rest is a nice cream color.
The darker area smelled a little, but I'm hoping that cures away.
I cut a small side off and washed my hands......surprisingly, my
fingers puckered only a little and the lather was fantastic. (I know I shouldn't
do that) Now, I'll leave it alone for 1-2 months.
So, alls well except the darker color from where it gelled.

Next time....I'll put the mold in the frig right after I pour.
And be patient for the soap to "finish" doing it's thing before I mess with it.
