Is this possible? Turned to taffy in less than an hour. Checked for separation after 10 mins, none.

Set timer for 30 minutes and found this!

I have 1 part gel to 2 parts water sitting in a dish right now but it's not all dissolved.

How big was your recipe? A smaller recipe will go through it's stages quicker. A higher heat will also aid it.

It was 1 lb. Wasn't going to risk making it bigger and then tossing!

It stayed around 160 the whole time. I still have it cooking though, I watched that portion of the video again and it said it should really cook for about 3 hours.

Is this when the lye neutralizes? During this part of the cook phase?

Yeah, it can take time for it to complete the cook phase. When I made mine with Glycerine in place of water, I reached taffy stage in under 10 minutes... but there was no way the lye was neutralised yet.

Generally 2 - 3 hours depending on your recipe for the lye to fully neutralise.
