Bag started expanding like balloon. I guess i have too much of something. Any ideas?

Citric acid, baking soda, fragrance, witch hazel. Its the cupcake fizzy recipe. Even the cupcakes started expanding. From inside out. I havent frosted them.

Humidity does play a part in the sucess of fizzies. I would try less witch hazel, or wait til the humidity goes down.

the first time I made these I used citric acid from Brambleberry. The next time, I bought some from a local brewery. Is there any difference between the citric acids?

food grade citric acid has a different composition than pharmaceutical citric acid. They react differently. Need new receipe for food grade citric acid.

I think you should only use anhydrous citric acid, to prevent premature, er, fizzing!

More than likely because the ziplock baggie trapped the moisture the chemical reaction between the citric acid and the baking soda started. That produced the gas that caused the baggie to start expanding.
