Linda, for the tomatoes you do not need to peel or seed. Just besure that you cut the slices thicker, about 1/4th of an inch or more. Too thin and you will not be able to get them off of the rack. Then I put in an airtight container or ziplock bag. We use them to put in soups, chili or just crumble onto of salads! Dried tomatoes are very sweet.

Linda, I have never dried carrots! How thick do you slice them before drying? I just put in my carrot seeds! What I love about dehydrating is how my kitchen smells... especially when I do the herbs!

Linda, I have done onions. I love that smell - not as well as the leather smell, but it is one of my favorites! But beware, I have some genetic differences in my smeller... can't smell skunk or alcohol.
