I infused some olive oil (with comfrey, calendula, and chamomile) to make a salve. However, I was out of the containers I needed to put the salve in, so I placed an order for them. They won't be here for a week :(. Meanwhile, I put the infused olive oil (not made into the salve yet) in a glass container in my refrigerator. Is that okay for the oil? Will the infused oil "keep" okay for a week there so that I can use it to make a salve next week?

You shouldn't have any problem with keeping an infused oil. I don't think I'd put it in the fridge tho because of condensation - it could introduce water. After all, salve is basically just infused oil and beeswax and it keeps for a long time. :wink:

I have let my infused oils sit on the counter for well longer than a week. You just need to be careful about leaving fresh herbs sit in them for toooo long... they can and will go bad!

It's safer to use dried herbs if you're planning to let it sit for any length of time. Fresh herbs can cause problems if the oil isn't used right away.

Thanks, ladies :). I haven't used fresh herbs to infuse, and don't really plan on it anytime soon. Would need to do much more research first, I think!

I use my dehydrator and love it. This is how I do most of my herbs.... and tomatoes. This serves me all winter in Wisconsin.
The fresh herbs that I use in my oils is for use in cooking or making a dressing... yes I do end up using them fairly quickly. Had one that I forgot about and went on vacation.... not so good when I came home.... but I had extra herbs to play with. Our lavender is just starting to bloom.... I have never tried to dry these, would be a new experience for me.

Ditto on the fruit leather and jerky! Saves us a ton of money when we're going to be out of the house all day-----a nutritious, tasty, not-too-messy meal! Easily portable too :).

We tried to dry some basil with our dehydrator last year and even on the proper temp with plenty of air flow, it still took 36 hours of continuous running and it STILL didn't get some of them dry. So, meh. Not sure I want to try it in the microwave since that thing gets a lot of use as is :lol:
