Once I pour the soap into the mold, and it's time to "insulate it" is it safe to do so in a cooler? I just want to make sure I won't damage it. I've been using shoeboxes covered in towels for insulation, but I was wondering if this would be better. It seems that it would retain the heat a lot longer. Is that a good thing? Can there be too much insulation?

Sure, you can put it in the cooler. If it doesn't gel, that's ok too. Soap does not need to gel in order for it to become good soap.

About the too much insulation......from my experience, yes----there can be too much.
I used to always heavily insulate my soaps, but then found that sometimes they have overheated and created a small ridge/volcano down the top length. I know sometimes it can happen from the FO, from soaping at higher temps, or from an ingredient that creates more heat (like honey). My solution now is to cover and lightly insulate (put a top over the soap and a medium bath towel) and then check it every once in a while to see what's going on. The only "problem" with this is when I soap before going to bed and I just have to make an educated guess as to how heavily (or not) to insulate.
