Midnight, where did that loaf separate? We learn something from nearly every batch in the early years. I hope you are keeping good notes. On a postive side, I really like the top of this loaf. Maybe for starters you should focus on one color and enhancing the tops as that seems to be a strength for you?

It separated right where the layer of cocoa was

I've been keeping very extensive notes, along with a photograph of each batch. I'm wondering if there was too much cocoa. It was hard to get a thin layer. I guess I may have needed a sifter or something.

I read about a neat trick to make a thin layer. Because all you want to do is dust it.

Use a jar, and elastic some pantyhose to the jar. I heard it works better than sifting it.
