I was wondering if some could explain why you wouldnt let your soap go through the gel phase. What are the benifits of gel? And what are the benifits of non-gel. Why you are for or not for it? Thanks!!

Gelling speeds up the saponification process, even though you still need a good 4 to 6 weeks cure. I prefer not to gel because my soaps (like goat's milk) come out lighter, I like the different feel and I use less fragrance than gelled. It's a matter of personal preference. Be aware that ungelled soap can zap; up to 3 days later.

I also prefer to not gel.
A weird thing that seems pretty common, that happened to me though, was when I had some soap where half of it went into gel and the other half didn't.
It didn't look very nice. Obviously not very presentable for sales if half the bar is darker.

How can I prevent that from happening?
