IMO it depends on the soap. You don't say if you're doing cp or hp which I believe makes a tremendous difference. Doing cphp, I know that if I leave my lard or co/lard soaps longer than 12 hours my soap cutter (wire) wont go through them and I have to cut them by hand. With the lard, I'm lucky if I can cut them at 12 hours, and I get cleaner cuts if I do it within 2-3 hours while its still soft. Note that all of my recipies include salt (usually 1tsp ppo) which makes for a much harder bar. However, with my 100% castile soap, I can cut that up to a week later and still get a clean cut. If I leave my salt bars longer than an hour it takes a table saw to cut them!
If you want to experiment, I recommend doing your cutting as usual and then week by week (or even day by day) slice a bit off of one bar and see where you feel you get your best cuts. I have seen soap sold by the block but have never tried this, hmmmmmm maybe time for some experimenting of my own.
