I have a big ol mason jar of honey bought off some Amish guy who keeps bees. I've had it a while, but I just opened it and it seems to have like, separated? There is a thin layer of liquid normal-looking honey on top, but the rest is very goopy and seems to have crystalized a bit? Can I still use this honey for eating or otherwise?

you can use it for everything.... If the crystals bother you, you can heat it GENTLY in some warm water until the crystals dissolve. Do not use a microwave - it creates hot spots that can destroy some of the "good stuff" in the honey.

FYI honey is the only food that never spoils - assuming the honey is harvested after the bees have capped off the honeycomb (otherwise it can ferment). Bees see to it that the honey is at the right moisture content before they cap it off.

I knew I'd heard honey never spoils, but I don't think I've ever had a big enough jar of honey for long enough to see this ever happen before. Thanks for the help! I just put it in some cookies.
