If I want to use a brine solution as my water - would it be recommended to increase my usual 5% SF? Thanks all for the advice and help!

Brine water will not change your superfat. I would go with your 5%. I prefer 7% myself.

Thanks so much! 7% sounds more my speed -- while my hubby loves the soaps at 5% I would like to try something a little more moisturizing.
