Thank you, Mellifera!! I have been doing some more research, and that is exactly what I have been reading, that as long as the aluminum is between two layers of stainless steel, it should be fine. In fact, the more research I do, I find that nearly every stainless steel container has this inner layer of aluminum (it conducts heat well, apparently, because stainless steel does not very well in it's pure form).
Thanks so much for confirming that for me!! That's a relief, too, because the only stainless steel pots that don't have an inner layer of aluminum (copper, instead), are around the $100 range, and I was thinking there is no way I can afford that. Whew, I feel better now! THANK YOU!
