The easiest way to know your superfat is to add all your oils and butters right up front and let the lye calc calculate your lye for you. Lye at trace is still very active and it will take whatever it wants. There is no guarantee that any particular oil or butter will end up as your superfat. There are some minor differences between lye calculators because each oil or butter has a SAP value. That value changes slightly from harvest to harvest and season to season. Some calcs use the lower end of the SAP value, some use the higher end. Thus minor differences in the lye needed. Superfat is also called a lye discount. The less lye, the higher the superfat. I normally superfat at 7-8% and calculate it right into the recipe. I don't add any oil or butter separately.
