Hi,

I just plugged in quantities for one recipe and received these headings:

Superfat - it lists 0% - 10% with different decimalized numbers under each percentage. What do these different percentages mean?
Lye and Water - this lists the same 0% - 10% with a water 'range' alongside each percentage. What does this mean?

Any insight is much appreciated as I'm not sure how to write more without complicating it. Is anyone familiar with this calculator and these breakdowns?

Thanks so much.

The range under superfat is how much oil to add at trace to get a certain percentage superfat, and the range under discount is how much lye & water to add to achieve your desired superfat that way.

Like, I entered a 32 oz recipe, if I want a 10% superfat I can either add 3.2 oz of extra oils at trace (although I'm not a fan of the oil-adding method), or use 4.2 oz of lye and a minimum of 8.4 oz water.

Edited to add: If you don't want it to show that range, at the bottom under "display options" you can choose to enter the superfat or lye discount amount.

That's a range. I normally do 7-8% superfat.
