Why do people like to use wooden molds for cold process? Is there some advantage to using them? It seems to me they just require more work, having to line them and all, so I didn't know if their was a reason behind why they are used so often.

Wood insulates better. So for those people that prefer to gel, it's a better insulator and tends to go into gel faster.

Aaahhhh! Makes sense! So, if someone wanted the soap NOT to gel, would it be better to use a non-wooden mold?

You're welcome. If you want the soap to not gel, it's better to use a silicone, plastic or HDPE mold and put it in the fridge or the freezer; up to overnight.
