I took a cooking class and one of the dishes was a lavender creme brulee. (AWESOME, btw). One of the ingredients was lavender buds. I asked what kind he used. He said, "lavender." I said, "what kind of lavender?" He says, "These purple buds." I said, "English? Provence? Spanish? Officianalis?" He blinked at me and said, "There are different kinds?"

They do! The recipe used a teeny tiny amount - each dish held about 1/2 cup of creme brulee and had 3-4 buds in it, then candied lavender was sprinkled on top. Very pretty and yummy!
