Two questions:

1. What is the difference between polysorbate 20 and polysorbate 80?
2. Does anyone know if polysorbate could be purchased from a brick & mortar store instead of online? I need mine yesterday  and don't want to pay for overnight shipping. I live in a large city but I have no idea what kind of store might carry it.
Thanks
Peggy

Polysorbate 20 is used when you need your fo or eo to bind with a water based product.

Polysorbate 80 is used when you need a heavier oil to bind with a water based product.

As for finding it locally, probably not, unless you live close to a B & B supply company. You could try suppliersbystate.com to see if there's someone close to you.

Genny's post sums it up. If you can only get one, go for 80, because it will do 20's job, but not vice versa.
Polysorbate is used in food, too, apparently.

I'm so glad I ended up needing polysorbate! I tried supplierbystate but couldn't find anyone nearby that had it. However, I kept looking and discovered a supplier right here in Atlanta (soapgoods.com).

Yay!
