I've been trying to figure out if there's a difference between using suet or muscle fat for soap making.

I've read in some places Tallow is only from rendering suet, and should not be confused with muscle fat.
But some people call beef fat of any kind tallow, once it's rendered.

Is there a difference between using beef suet, or muscle fat to make soap?

Most of my soap is Beef tallow based. I render it my self. So in answer to your question, my experience has been that once properly rendered either suet or fat from the rest of the beef makes fine soap and I do not see a difference in the finished product/quality of soap. That said, there may be a slight difference in the color if the "body fat" renders a slightly different color.

The biggest difference I find is that suet renders more easily and gives a much higher percent of tallow in the end. I no longer mess around with thin fat trimmings but do use any thicker trimmings, waste not want not.
