I'd start with 1 tsp/lb of one or the other. I add more than that, but I also add other butters/glycerin/oils etc. I use a Presto pot to make normal batches (4lbs), and a metal pour pot from Michael's for 1 lb batches (in a pot of simmering water) and add beeswax first to make sure it all melts.
Oh, and I also let my bars sit unwrapped for 2 -7 days before wrapping. It seems to make then a bit harder, but it could be my imagination too
I've never used the fridge/freezer to unmold.
