 Post subject: Cupcake frosting problem

I have made the bramble Berry cupcakes about 3 times now. For some reason, this last time I had a terrible time with the frosting - it would not get hard. I made 1/2 the batch and at first thought it was the meringue powder I used (I got this one at a bulk store - usually use Wilton's). So, I got my usual brand of Wilton meringue powder and tried it again. This time, I didn't add the Fragrance right away so I could use a small amount for a few Hello Sweet Thang cupcakes. I just added a small amount of Hello Sweet Thang to a small portion and the frosting was great - set up almost immediately. Then, I added about 1/4 ounce of Buttercream FO to the remaining 1/2 batch of frosting and my frosting got really soft. I tried adding powdered sugar - no luck. Next, I tried mixing some meringue powder with hot water and then adding that to the frosting - still no luck. No matter what I did, the frosting was a liquid mess! Is it ok to just not add any fragrance to the frosting since there is so much in the cupcake itself? Any idea why this happened? FYI - I ended up throwing out that batch and making another without any FO - set up great.

It sounds like it was the FO. Can you leave it out?

I'm thinking the same thing. I have plenty of FO in the cupcake itself, so I am thinking that I will just omit the FO from the frosting.
