Hi, first post. Lots of very nice people here.
I bought AM's ebook, Liquid Soap. I followed the instructions and got a very good batch of soap. A bit of confusion on my part (it's not that hard to confuse me). She says, if milky..."continue cooking your paste for another hour before removing it from the heat and letting it sit overnight. You can store your finished soap past in a jar, or a plastic bag, or dilute it immediately."
Is there a reason to let liquid soap sit overnight? I did Google this and most of the answers were to let it gel.
Sit overnight OR dilute immediately? Thanks in advance for any insight for this newbie.

Welcome!
You might be confusing hot process soap made with sodium hydroxide with liquid soap which is potassium hydroxide. Liquid soap will most always be "gelled" or cooked. One is a solid soap; one makes a liquid soap.
For liquid soap, you can leave it be as a paste and dilute just parts of it as you need. Or you can dilute it all at once. Either way is up to you.
