Any oils added at trace are fair game for lye, so waiting to add oils until the end doesn't guarantee those will be your superfat oils. I prefer to add all the oils at the same time, less chance I'll accidentally leave something out and wind up lye-heavy.
If you're infusing, you want to pull those oils out of your total. So, in your example, if you're using 80 total oz of oils, you'll be using 6.4 oz of olive oil total. Let's assume you're using two colorants, and you want to infuse them each in 2 oz of oil. If you measure out your 6.4 and add it to the recipe, then infuse your colorants in 4 total oz of oil and add that, you'll wind up with 10.4 total oz of olive oil, throwing your recipe out of whack. But if you add 2.4 oz of olive with the rest of your oils, then split up the remaining 4 oz to infuse your colorants, you're sticking to your recipe.
