So, why does adding some form of sugar (sugar, milk, beer, honey, whatever) increase the lather?

Also, why is the suggestion to boil beer to get rid of the alcohol? Alcohol is the sugar, and I think most of us use beer to increase lather. So why boil it off?

And, even if you boil off the alcohol, you still get more lather using beer than water. At least, I do.

(It's stuff like this that makes me say that there are things in soapmaking closely akin to voodoo . . . .)

Alcohol will make the soap seize. It's not the right kind of sugar for soapmaking. It's fermented, which reacts with lye.
