IMHO it is the hops that give beer its flavor and aroma. If you have ever gone into a brewery the hops room is the best! I have always wanted to grow some but do not have the room and I am not sure that our growing season would work. I know of no hops growers in the area I live, but I know of alot of breweries!

Linda, we tried home brewing as well..... lets just say we are better at drinking the beer that we were at making it!

On the Soap Queen blog, Anne-Marie says that she learned at the conference that you need to simmer alcohol for 2 hours to remove 90% of the alcohol. Of course, now I can't find the quote (and was it really 2 hours? Drat!). Anyway, I'd love to find out more about this, because I'm sure I've never simmered for more than 30 minutes or so, and my ale soaps turn out fine.

I simmer for about 10 to 15 minutes, then put it in the fridge so it gets very cold.

I haven't timed it. I just let it simmer while I'm doing other things, then make ice cubes out of it.

I don't have my notes from Ruth's class in front of me but I think it was cook for 15 minutes and let sit out for 12 hours, uncovered. I can double check the second I'm back in the office. =)
