Super noob here and this might be a lost cause, but it's worth a shot....are there oils, or a additive (baking soda maybe?) I can use to make a soap smell like nothing at all? Or at least very earthy. Most unscented soaps I've came across (even the homemade ones) still have a soap scent to them. My dad is highly sensitive to smells and as he is getting older he can't handle a lot of smelly smells without getting major headaches.

Try pure castille. You could add a small amount of a scent like Amber, Lavender, Vanilla, Vetiver or Patchouli.

Honestly, pure olive oil soap is probably best for him. It will harden to perfection after a good 4+ month cure, and the lather will be creamy. Not bubbly at all (maybe even a bit slimy), though you can improve that a little bit by adding honey or table syrup at trace, and/or using goat's milk to replace up to half of your water (added to the oils AFTER you've dissolved your lye in your water and RIGHT before you add the lye water to the oils).

If you use the goat's milk, don't do hot process, CPOP (cold process/oven process), or let the soap gel -- just pour, and don't insulate, and maybe even try to cool it a bit in the fridge. This will slow down the curing process, but since you're making olive oils soap, it will cure (be safe to use) long before it hardens enough, so you'll be fine.
