I usually keep my soap covered or insulated to get it to gel, but I've been making Goat Milk Oats & Honey and have put that straight into the freezer. I've only done this twice, and when I pull the soap out of the freezer it seems to sweat. How long do I wait to unmold/cut it after it comes out of the freezer? I use a wooden log mold that is lined with freezer paper. Should I try to take the freezer paper off right away, or is it best to let it "defrost" with the paper on? And with no gel, is there a certain length of time I need to wait before it's hard enough to cut well?

Pretty much all my soaps are GM + Freezer. It's not so much that they are sweating I find, but the condensation as it defrosts. Happens when you have anything defrosting.

I tend to make my soap at night (due to kids) and pop it in the freezer. The following morning I take it out and pop it on the sink to thaw. So it usually sits there from morning till evening time. Then once it's room temperature I pop it in the laundry for another 48 hours. Then I unmold. Then I usually give it another 12 - 24 hours and then cut.

I find if I try to get it out of the mold too soon, I ruin the corners. Could be my recipe, or could be that I don't gel... but yeah, I find it stays soft for about 3 days.

The reason I personally wait longer to cut is I find I get less drag lines if I wait about a day or two after unmolding. Sometimes when I unmold and cut straight away, because I use a cheese cutter, I get this like half circle pattern on every piece. I'm fussy hehe.

I prefer not to gel. Once I take my soap out of the freezer, I wait til my Tank can cut it without breaking any strings. Most times, the soap is still pretty cold, but no longer frozen. Ungelled soap can zap, up to three days later. After that it should be fine. The condensation should go away as the soap dries.
