In order to get a good infusion you will either need to allow your herb to sit in the oil for 2-3 weeks, shaking once a day, or heat for at least 2 hours, over a low heat. The easiest way to do this is to put your oil and herb into a crock pot, turn on low, and leave alone for 2 to 3 hours. High is not good as it tends to scorch the herb/oil. It is also easier if you use a large amount of oil and then bottle what you do not need for this one batch. Then you can decide at what percentage you want your infusion. Anywhere from 15-100% of your oil is workable, so it just depends upon your personal preference. A 1/4 cup herb to 1 cup liquid ratio will provide a good infusion, however, the more herb you add, the stronger the infusion, just like a greater length of time for brewing will also afford a stronger infusionl. SO I would use at least 1/2 cup of herb for 16 oz of oil
