Can you folks tell me how long can coconut oil be stored? Im thinking about buying it in a 50 lb. block and that will last me along time, Like a year). I live in the north east so it's not what you would call hot most of the time. I've got a nice cool cellar for 6 months of the year. Linda

Among the most stable of all oils it is slow to oxidize and thus resistant to rancidity, lasting up to two years due to its high saturated fat content. In order to extend it's shelf life, it is best stored in solid form (i.e. below 24.5°C [76°F]). I still have some that I am using after 3 years but if using coconut oil for cooking I would not use it after 12 months but for our use is fine for soap making. I know that in Turkey they are still finding olive oil on the sea bed in closed pots form 10bc and it is still ok.

Ditto on all of that. I've used Coconut Oil that is older than a couple years with no problems but you can never predict how long your supplier has had it so a year shelf life (in your house) is ideal just to be on the safe side.

I've actually been using the same bucket of coconut oil for 6 years, if you can believe it.

Every time I open it I say "Oh, it has to have gone bad by now. I just know it's gonna be rancid and nasty..." But, nope, it's still as good as it was the day I got it.

I'm not saying my results are typical, mind you, just that you probably don't need to worry too terribly about coconut oil's shelf life.
