 Post subject: another CPOP question

If I use this method, put my batch in the oven at 170 degrees for 1 hour, when can I pull this out of the oven? I'd like to make 2 batches this way today and would like to pull this out of the oven after the 1 hour and just set it on the counter. Is this okay or do I need to leave it in the oven with the oven shut off after 1 hour overnight? Thanks.

You can pull it out as soon as you get wall-to-wall gel - be careful moving the mold, because gel can be pretty liquidy. set it on the counter and cover it lightly, just so it doesn't cool down too fast - that seems to preserve the texure and keep ash at bay.

Thank you Magic. I can actually leave it in the oven for 4 hours, so I will shut off oven after 1 hour, leave it til after dinner, pull it out and start my other batch and then I'll leave that one in overnight. Thanks for much for your advice.
