I received samples of peppermint leaves (about a half cup) and raspberry seeds (about a quarter cup) last week, and while I'm delighted to have them, I'm not sure exactly what to do with them. I'd like to use the raspberry seeds in an exfoliating bar, but I'm not sure how much to use or if the seeds should be ground up a bit more before adding them to the soap. As for the peppermint leaves, I'm at a total loss how to use them in soap at all, so any and all input is welcome. How's that for a noob question?

You can finely crush the peppermint leaves and add them directly to your soap. Most people use the seeds as is as they are very exfoliating. Start with 1 teaspoon per lb. of soap. Don't use it on the face as it can be scratchy.
