You can do a "zap" test on your hardened soap (after you've unmolded 24-48 hours later) which is where you literally "taste" the soap, either directly or off your dampened fingers. You'll get a "zing" on your tongue if it's lye heavy. You can also buy special test strips for this same purpose, but I've read that they are not always reliable if you're testing for a specific PH level.
If there is undissolved lye there can be other telltale signs like chunky looking white spots in the hardened soap. Others here might be able to describe this better as I've not had this happen to me.
And of course you always want to make sure your lye is fully dissolved in the water/milk before adding to your oils/butters and then be sure your soap reaches trace.
