Mine is a 16 qt IIRC--I make big batches, but I've done one lb test batches in a small crockpot.
How long depends on the recipe-- high olive oil can cook for two hours or more, but the stirring time isn't that long. Stick blend on and off for an hour, maybe, when making a high olive oil recipe. Coconut oil can make things go really fast, and using glycerine in place of water can make it super rapid.
